 Script for interview with French vegan restaurant owner Claire Vallee


ME: So how did you feel when you found out ONA was awarded a Michelin star?

CV: Well, overwhelmed, it felt amazing of course… Not only to receive the star but I think also to bring more recognition to vegan food and how good it can be, without all the animal products! I mean, our vegan food is up there with the best now and the recognition is good at showing it’s not boring.

ME: And is it true that you were self-taught before opening ONA?

CV: Yes, it has always been a real passion for me, and I must admit it has been really tough. I was crowdfunding in 2016, got a loan from the bank and then had to find volunteers over social media! But clearly it was all worth it, I am very proud of myself and the team for having the passion for it. I do not think we ever dreamed of getting a Michelin star.

ME: That’s impressive. What are your plans for the future in regard to ONA?

CV: The pandemic is putting a strain on all hospitality, so we’re planning on creating more accessible plant-based food whist keeping customers safe.
